The 10th annual Mexico Beach Artificial Reef Association (MBARA) Kingifsh tournament was held this weekend in Mexico Beach, Florida.
This year there was a record 171 boats entered in the tournament. On Friday night before the tournament there is a captains party, where the fisherpeople, and their families can come and enjoy the good food and fellowship.
I am part of the MBARA cooking team. This year we smoked over 350 pounds of fresh Louisiana made sausage, for the captain’s party.
The sausages this year were: Georgia Hot, Hot, Mild, Cajun Green Onion, Chicken and Jalapeno, and my favorite XXX HOT.
Things were hot and we got hotter smoking these wonderful sausages.
But the Food was even hotter than we were
The XXX hot sausages were a hit, even with the reminder the next morning, they were still really good.
Hey all work and no eat makes cajunking grumpy, so I took time to eat some of our handy work. These are the XXX HOT sausages, yes that is catsup/ketchup on them. I had marinaded these in a really hot sauce and was trying to cool them off some.
When all was said and done we smoked over 350 pounds of sausages and they were gone in a little under 2 hours. [:D]
