Molasses cookies can be great in their own right as well as a stealth ingredient in foods that range from pot roast (yes!) to ice cream. Some of our favorite molasses cookies from around the country are the cracked apple spice cookie at Scratch Baking Co. in Portland, Maine, and the straightforward molasses cookies made at Toni’s Country Kitchen in Michigan’s Upper Peninsula. The best thing to do with molasses cookies, other than putting them directly in one’s mouth, is to use two of them to sandwich banana ice cream, as is done at Pumphouse Creamery in Minneapolis.
