Chicken Pot Pie

A chicken pot pie is chicken meat, vegetables, and gravy in a pastry crust – familiar comfort food almost everywhere. Its old-fashioned cousin, unique to the Northeast where it once was a specialty sold by chicken-farmers’ wives, is a chicken pie (no pot), made with nothing but warm shreds and/or slices of chicken meat (white and dark) in a crust. It is a unique pleasure to first crack through crust of the latter and be deluged with the oven-roasted aroma that escapes. Chicken pies customarily are served with vegetables, mashed potatoes, and gravy on the side.
