Banana Cream Pie

Bananas and custard are a beloved combination. In a pie with a flaky crust, they are something like banana pudding re-imagined. Aside from quality of custard and crust, the make-or-break element of this pie is the state of its bananas: Are they unripe (too firm), over-ripe (mushy), and are there enough of them … or, in some rare cases, are there so many that the crust and custard seem disrespected?
