Barberton fried chicken with fries and coleslaw

Barberton Chicken Recipe | Fried Chicken | Barberton, OH

This is not your basic fried chicken. This juicy and crunchy concoction that will make us all break our diet rules is cooked in lard, which makes all the difference in the taste for this chicken. Based on a traditional Serbian recipe, this chicken is found in one area of Ohio. But now you can make it in your very own kitchen!

  • Prep Time: 2 hours hours
  • Yield: 4 Servings


  • 2 lb. 4 pieces boneless, skinless chicken breasts
  • 3 cups buttermilk
  • 1 tsp. salt

Crust Coating:

  • ½ tbsp. salt
  • ½ tbsp. pepper
  • 1 cup all-purpose flour
  • 2 ½ cups panko crumbs
  • 3 large eggs beaten
  • 1 quart vegetable oil


  • In a large bowl mix buttermilk and salt. Submerge chicken pieces in buttermilk, cover and refrigerate for 2 hours.
  • Combine flour, salt and pepper and place in a shallow bowl. Add beaten eggs into another shallow bowl and panko in another separate bowl. Remove chicken from buttermilk and dredge into flour mixture and shake off excess. Place chicken in egg and then roll in panko until well coated.
  • Heat oil to 350°F in a heavy bottomed Dutch oven or pot. Add chicken pieces and cook about 5 to 6 minutes or until golden brown and cooked through. Remove and drain on paper towels. Serve with French fries and coleslaw.

I LOVE ALL THE legendary Barberton chicken it’s the only chicken that beats Popeyes , its better than any southern chicken I have found to date. The hot sauce (should be called hot rice , name is a bit misleading really its not a condiment, its a side dish lol ) is very good the second day or after, seems the older it gets the better it tastes , I always take some to go too.

The chicken, hot sauce, and coleslaw are all great and compliment each other well. The recipes for all tree are on Pinterest, but you’ll have to search deep for them. Look for a newspaper clipping showing all three. I posted the recipes on this site and they were almost immediately deleted. Good luck finding them.

    Lard IS the key. Also I think fine bread crumbs is better. The recipe I have doesn’t use buttermilk.
