so here is this young boy, thinking he’s going to get to eat his favorite food of the moment (mashed HOT potatoes) and he gets a mouthful of cold, icky, mashed potato salad! It took him almost an entire summer to actually try to eat real mashed potatoes again! To this day, and he’s 7 now, he still wants to be reassured that they are real mashed potatoes and not that cold version he remembers from that summer.
Why did she do that? Did she not tell him?
I’m really just curious…those aren’t necessarily child-friendly ingredients…especially to a nine- or 10-month-old.
5 pounds potatoes cubed ,boiled potatoes that have been salted during cooking
one bunch green onions,sliced
one dozen hard-cooked eggs,chopped
a cup or two of chopped homemade bread and butter pickles
one quart Duke’s mayonnaise
freshly ground blackpepper and kosher salt to taste
Excellent potato salad !

Lots of chopped onion
Garlic salt
zesty garlic dill pickle slices, chopped
freshly ground black pepper
Just enough mayo to bind it
A bit of chopped hard-boiled egg.
Oh yeah, and a lot of potatoes, boiled and cut up.
Top with a several slices of hard-boiled egg and sprinkle with a little paprika.
And whatever you do, don’t add any of that nasty-tasting stuff that any and all store-bought potato salads have in them. I don’t know what it is, but they all have that same taste, and if I ever find out what it is it will be banned from my kitchen.
I don’t know, but my neighbor has it nailed, hands down. [:D]
peeled, boiled red potatoes, have to be cut in fairly large chunks, chopped onion, green onion, celery, hard boiled eggs, Hellman’s mayo, salt, peppper, and probably too regional, but a few drops of Steen’s cane vinegar, if not available, then a little yellow mustard.
Not that picky about what goes into it – there are so many great combinations – I just can’t get past it if it’s swimming in mayonnaise. It only needs enough to hold it together.
Adding a touch of ranch dressing is good, too.
Boiled red potatoes
Hellmans(or Dukes if I have it)
chopped onion
chopped celery
chopped dill pickle
a pinch of celery salt
pepper to taste
a splash of yellow mustard mixed in
sliced eggs on top for those who like them in their salad
You all are breaking one of my food 10 comandments.

OK, Kinda like the slaw survey above… What should or shouldn’t be part of a great Potato Salad.
Off hand, just quickly thinking of typical American-style, French, and German potatoe salads, I would say that the only ingredient that all potatoe salads include is potatoes. Seriously. Everything else is optional.
My usual is:
Peeled Red Potatoes
Hard-boiled Eggs
Sweet Pickle Relish
Mustard
Red Pepper
Black Pepper
Salt
Mayonnaise
I might throw in some chives or scallions if there are some in the house.
Another older post brought back just in time, for me anyway.
I was just thinking that I haven’t had potato salad since last fall or maccaroni salad either.
I like fresh chopped celery, onions {lots of them} and fresh parsley.
I do add the vegs. and vinegar and seasonings while the spuds are hot.
Then I finish off with the Mayo.
On occasion I’ll add egg and crumbled bacon, just like having breakfast for dinner.
Rarely do I add prepared mustard, but I add dried mustard all the time.
Pickels, never
Fresh dill can spark it up at times also.
I’ve also added chopped sun dried tomatos for added flavor and color.
Question? I thought all German potato salads were served hot. Is this not the case in the above recipe? Chow Jim
roasted (with olive oil & rosemary) skin on red potatoes, apple cider vinegar( just a splash) onion, celery, mixture of 1/2 Hellman’s mayo and 1/2 sour cream, celery salt, pepper, chopped hard boiled egg, toss and taste- adjust seasoning if needed. They say to hit the hot potatoes with the vinegar (or what ever acid you are using) because it gets absorbed quicker into the actual meat of the potato…..so splash first after roasting- then add the rest after the potatoes have cooled to room temp.
I like "German style" potato salad with bacon and vinegar. It’s good warm too.
Boiled sliced peeled potatoes
hard-boiled eggs
chopped dill pickles
chopped onions
sliced black olives
mustard
wine vinegar
homemade mayo
salt and pepper
paprika on top
I once used left over baked potatos from the previous nights BBQ. Added the usual ingredients and it was the best ever. I have not been able to repeat the taste since.
Dang It!
