    Simple meals for us since Christmas. Mostly leftovers and easy stuff at home. Hamburgers on the grill, BLT’s, meatloaf and sandwiches, soup. Stuff like that.

    I’d made good use of the leftover rib roast I made for the family Christmas dinner (with lots of advice from another thread here) – today I had one of those 15-bean dry soup mixes in the crock pot all day, with a smoked hamhock and leftover kielbasa and bacon. I’m pretty sure I know what I’m eating the rest of the week.

    I think we have a winner.
    I am emptying out my freezer. Many vacuum sealed items are waiting to be eaten. I also got a gift case of Usinger bratwursts that are being eaten with melted shredded cheese inside a tortilla that is wrapped around it.

    I’m going with some stuffed flank steak I bought from the Amish market about two months ago. I’m not sure how it will turn out…I dont’ have a good feeling.

    On the other hand, my black eyed peas turned out great.

    The dogs are looking forward to walking the beach in ALAbama in a few weeks !!

    We have a big package of "country style pork ribs" in the slow-cooker today. The house smells great and we are looking forward to some ‘fall apart’ pork later.

    Otherwise not much in the way of special meals in store for awhile. we have a lot of catching up to do on the leftovers.

    Brad,
    Yeah, a lot of scraps and leftovers are being consummed today and tomorrow. I have learned that my two dogs love pickled herring and the "juice" that THE HERRING are packed in. The even ate some of the onions that come with the Herring ! If I like it…They do !!

    I am cooking today in anticipation of the rest of the week-lasagna,chili, bean soup(which I prepared earlier this week)I went to the store today and bought fresh veggies and fruit.I do not want to see cheese and crackers, cocktail weiners in sauce,etc… for a long, long time!![:o)]

    How many of you have a tendency to fix simple meals for a time after the holidays are over? This past week we’ve been having dinners like soup and bread, Tombstone pizza, broiled bratwurst…after the pace of the holidays, the rich foods, and the constant snacking we do a bit of an about-face this time of year (NYE and NYD excluded).
