Since all of you are out slingin’ dogs, I will keep this going for the newbies…
Still working on the dog thing. Out here people aren’t dog specific (Vienna, Sabretts etc.) I just need to find a good dog at a good price. I will let you know how my experiments work out.
I got my cart on Craiglist. I looked at ebay but didn’t trust anyone and didn’t want to pay all that shipping.
Today I will get the hitch set up on my truck. I am on hold with the insurance people as I type this. Today liability insurance. Tomorrow I need to get the cart inspected then take health approval papers to county for peddlers permit. Every county is different. Then I wait for 2-4 weeks (yawn) for permit.
Here is some newbie advice. When you do your business plan (or write out numbers on the back of an envelope while drinking a giant glass of red wine like me 🙂 ) Make sure you overbudget! Everything costs money and make room for expenses you don’t anticipate.

You think your happy now, wait until you have a big pile of money on the table from a hard weeks effort. Thats when its time to celebrate!!!

Considering your in California, heck, you can probably leave them on top of the cart and they’ll steam themselves! [:p]

Ok, another dry run. I had a beer, or 2 [:D], and got brave lol… Cut potatos in 1/4th’s with sliced onion and a few cloves of garlic. Steamed them for a bit, Maybe 15-20 minutes. Then, I added Kielbasa for about 8-10 minutes. Came out awesome. I also steamed some corn tortillas for about 1 1/2 minute. Came out awesome!!
I also cooked some cheap dogs and just threw the buns in at the last 2 minutes and they were perfect! Even my 5 year olds’ half eaten dog is still soft an hour later.
So I guess it really is trial and error. I am sure 2 minutes isn’t long for a bun but once I get the hang of it and can sort of anticipate my crowd I should get bun control under control so I can have them ready! [:p]

Ok, so I did a dry run with the neighborhood. Only thing that went wrong was my buns were too steamed. On average, How long does it take a dog to steam and a bun? Also, I was using the same pan for hot dogs since I only did a few. Did I mess up the buns by sharing a pan? I am assuming the dog to bun ratio shouldn’t be equal and that is what I did. Dogs were done, buns overdone….
