Yum! We’re going to enjoy your posts, I know it. There just happens to be a pack of chicken breasts in my fridge, bought them yesterday. I don’t have any orange juice but do have some fresh mandarin juice. That should work. The side dishes sound good too[:p]
Never-fail recipe for chicken, which people love – I serve it with roast potatoes and tomatoes provencale, but I suppose it would work also with rice and a salad:
2 lb package of skinless, boneless chicken breast, each piece deveined and cut into halves or thirds
1/2 stick butter
4 shallots, skin removed, sliced finely
2 tsps finely chopped fresh rosemary (usually if I strip 3 twigs this produces the needed amount)
1 cup fresh-squeezed orange juice (or use Tropicana)
3/4 cup heavy cream
Pat the chicken dry, salt and pepper generously, then brown in a skillet with foaming butter, 3 mins each side. Place chicken pieces in serving dish.
Add to pan the shallots, rosemary and orange juice, then the chicken pieces. Bring to boil, then simmer, covered 25 mins.
Remove the chicken from the pan (I sometimes make it to this point some hours ahead, and merely reheat the chicken for 15 mins in a 250 oven before finishing), and reduce the liquid by one-half: usually takes 3 minutes at the boil. (Which I then leave, covered)
When ready to serve, add cream to pan, and boil/stir mixture for 6 minutes until somewhat thickened. Pour over warm chicken in serving dish – et voil� !
