This is a recipe I used daily when I had a shop located in Kanawha City (east Charleston,WV in the mid 80’s) for BBQ s and Meatball Sandwiches and suggested it often when catering weddings for the buffet, one customer loved them so much she suggested them as a gift to herself for Christmas. The recipe was printed on a plastic kitchen tablecloth that my mother had used back in the 70 s it s awesome. This recipe has been quadrupled and can be cut down smaller if you just want to try it for yourself first. If you want a sweeter sauce use more brown sugar.
BARBECUE SAUCE & MEATBALLS
1 stick margarine
4 medium onions, chopped fine
1 cup finely chopped celery
Saute 10 minutes
4 – 6 oz. cans tomato paste
3 cups water
1/4 cup apple cider vinegar
1/4 cup prepared mustard
1/2 cup Worchester Sauce
3/4 cup brown sugar
4 tsp. chili powder
4 tsp. thyme
2 tsp. garlic powder
2 tsp. red pepper (I use cayenne)
2 tsp. salt
1 tsp. black pepper
SLOW COOK ONE (1) HOUR ON STOVE – This is delicious served with the meatball recipe or excellent to make beef, pork, chicken, turkey or even tuna barbecues with slaw on a bun. Meatballs with sauce also make a great meatball sandwich (hoagie) with mozzarella cheese.
4 lbs. ground chuck
2 medium onions, chopped fine
2 cup dry bread crumbs
2 cup milk
4 tsp. salt
1 tsp. black pepper
1/4 cup brown sugar
Combine all ingredients – shape into balls. Bake in 350 degree oven for 25 to 30 minutes or until done
