I like rice but I would have been too busy working on the ribs and beans to go for it. Great job Mike.

Looks great. Looks like my kind of dinner too. 2 racks and a small potato. I never would have thought to rinse the beans first. Good choice.
Ahhhh, the beans[:D] 2 large cans of Van Camps Pork N Beans well rinsed. 8 slices of thick sliced bacon diced. 1 lg sweet onion diced. Uncle Dave’s (PP’s brother) BBq sauce to taste.
Saute the bacon and onions together.
Add the rinsed beans and maybe a cup of Uncle Dave’s sauce. Beans should be wet but not at all runny.
Stir together well.
Bring just to a low boil then turn heat as far down as you can and simmer for awhile, stirring occasionally.
Or cook in the oven for a couple hours.
Looking darn good there Mike. And ditto on them beans, those are really looking tasty…

Beans and rice as a side for ribs. I like that. The beans look gooey dark too. Not pale.

We had a nice day weather wise yesterday so I fired up the BBq for the 1st time this year. I had bought 2 racks of baby backs Saturday in anticipation of having some decent weather. Got them on sale for 3.49 a lb.
I seasoned them up and let them come to room temp. Cooked them at ~210 at the grill for 4.25 hours in a rib rack with 2 big hunks of hickory, 1 hunk at a time. The potato is the sacrificial vegetable this time.
I brushed on 2 different sauces then hit them with the broiler for 5 minutes.
My dinner plate, homemade rice pilaf and my baked beans.
Tonight, ribeye for dinner.
1st ribs of the year.
