One of my favorite side dishes, I made some yesterday to go with smoked beef ribs, spicy deviled eggs, and salad. Pardon the pictures. I took them with my cell phone.
I’ve been experimenting with this recipe for some time now. The sharp cheddar gave it a little to much bite so I tried regular cheddar..tasted flat. For this batch I went back to sharp and added 5 slices of velveeta cheese to round it out. This worked well.
* 1 1/2 cups uncooked elbow macaroni
* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 1/4 cup milk
* 1 cup half-and-half
* 1/4 teaspoon paprika
* 1/2 teaspoon pepper
* 2 1/2 cups grated sharp cheese, divided
* 1 tsp kosher salt
* 1/4 parmesan
* 1 egg
* 1 tbls powdered mustard
* 1/2 tsp cayenne
* 5 slices of velveeta
Preheat oven to 350�. Cook macaroni in boiling salted water according to package directions but be sure the pasta is slightly undercooked!; drain well and set aside. Meanwhile, melt butter in a medium saucepan over low heat. Blend in flour, stirring constantly, until smooth and bubbly.
Gradually stir in milk and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes. Remove from heat and add all dry items (except salt), 2 cups of the cheese, the parmesan, 5 slices of velveeta, and the egg (I was using egg beaters so I mixed it right in but if using a fresh egg you will probably want to add a little of the hot liquid into the egg before adding to the mixture); stir until cheese is melted and sauce is smooth. Combine sauce with the macaroni and add salt to taste. Place in a buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter. Bake 25 to 30 minutes.
Serves 4 to 6.
I can’t find traditional beef ribs in this area (not with any meat on the bones anyway) so I asked my butcher for some long short ribs..took them home and trimmed them up. Rubbed them with a spicy rub and let them sit overnight.
In the morning smoked them for 5 hours using some apple wood. Then tossed them on the grill for about 20 minutes and hit them with some sauce (kc masterpiece, honey, and some of the rub).
Spicy deviled eggs. This is a simple dish and VERY spicy. Purchase the best jalapeno pickled eggs you can find. Then fix them like you would deviled eggs. The result of course is a very spicy jalapeno pickled/deviled egg.
