Hoe Cakes

A favorite bread of country folks in the South, hoe cakes are great under pulled pork barbecue with a side of coleslaw.

  • Prep Time: 5 minutes minutes
  • Yield: 5 Servings
  • 1 ½ cups cornmeal
  • ¼ tsp baking soda
  • 1 ¼ cups buttermilk
  • 1 egg lightly beaten
  • cup shortening or canola oil
  • Combine the cornmeal and baking soda in a bowl. Stir in the buttermilk and beaten egg.
  • Heat the oil in a skillet over medium-high heat. Pour ½ cup batter into the skillet. Fry until golden brown on both sides. Repeat with remaining batter.
