Hoe Cakes
A favorite bread of country folks in the South, hoe cakes are great under pulled pork barbecue with a side of coleslaw.
Ingredients
- 1 ½ cups cornmeal
- ¼ tsp baking soda
- 1 ¼ cups buttermilk
- 1 egg lightly beaten
- â…“ cup shortening or canola oil
Method
- Combine the cornmeal and baking soda in a bowl. Stir in the buttermilk and beaten egg.
- Heat the oil in a skillet over medium-high heat. Pour ½ cup batter into the skillet. Fry until golden brown on both sides. Repeat with remaining batter.
