
Low Country BBQ Sauce: Recipe from the Loveless Cafe

Ingredients
- 2 tbsp minced garlic
- ¾ cup chopped green bell pepper
- 1 ½ cups finely diced Vidalia onions
- 2 tbsp vegetable oil
- 1 tbsp crushed red pepper
- ½ cup dark brown sugar
- ½ cup light brown sugar
- 2 tbsp honey
- 2 tbsp molasses
- ½ cup apple cider vinegar
- 4 cups prepared mustard
- ½ cup ketchup
- 1 tbsp Worcestershire
- ½ cup water
- 2 tbsp salt
- 1 tbsp black pepper
Method
- Sweat the garlic, green bell pepper, and onions in the vegetable oil over medium heat. Add the crushed red pepper. Add the brown sugars, honey, and molasses and caramelize the mixture.
- Add the vinegar and let simmer for about 15 minutes. Add the mustard, ketchup, Worcestershire sauce, water, salt, and black pepper and simmer until reduced by one-fourth.
