Cream Puff

Cream puffs are featherweight pastries filled with whipped cream or pastry cream and sometimes dusted with powdered sugar or drizzled with sweet sauce. State fairs are the place to find the most impressive ones, mostly because hoards of hungry visitors guarantee that the puffs will be utterly fresh, made just moments before being served. Softball-size ones are a legend at the Eastern States Exposition, where they are sliced horizontally and piled with fluffy white stuff that is lighter than custard but thicker than whipped cream.
