Baby Back Ribs

Also known as loin back ribs, baby backs are extremely tender and sport a larger percentage of meat to bone than other ribs. Slightly curved and fairly small – about three inches – they are quite wieldy and hence a favorite in more polite restaurants where gnawing on a big, sloppy bone might seem uncouth. Baby backs come about a dozen to a rack.
