Nebraska’s Comfort-Food Meat Pie

When Russians of German ancestry settled the Nebraska Midlands over a century ago, they brought with them recipes for a unique meat pie. A bun of soft bread dough is baked with a stuffing of ground beef and cabbage, as well as enough spice to give it pizzazz, but not so much that it is anything but comfort food. The Runza shops, which started in Lincoln, Nebraska, have trademarked the old name runza and parlayed it into a fast food mini-empire. Lincoln also is home to the one-of-a-kind Tina’s Cafe, where the meat pie is called a Go Cart. At Sehnert’s Bakery, it’s a bieroc; at Gering Bakery, it’s a cabbage burger; and at the Breadbasket down in Newton, Kansas, it’s bierock with a K.

Sehnert’s Bakery and Bieroc Cafe

Gering Bakery
Best dish at Nebraska's Gering Bakery is the cabbage burger - a pocket of tender bread enclosing beef, cabbage, & onion. Frosted peanut butter pretzels, too!
Tina’s Cafe
A small-town cafe in the city of Lincoln, Tina's is known for immense cinnamon rolls and an item called the Go Cart, which is the classic Midlands Runza.
