Grapefruit Salad with Ginger Ale
A hot summer's day salad that is great served with grilled chicken breasts, or topped with shrimp.
Ingredients
- 2 tbsp unflavored gelatin
- ¼ cup cold water
- ½ cup boiling water
- ¼ cup sugar
- ¼ cup lemon juice
- 1 cup ginger ale
- 1 (20-ounce) can grapefruit sections
- 8 maraschino cherries
Method
- Soften the gelatin in cold water in a bowl. Add the boiling water, stirring until the gelatin dissolves.
- Add the sugar and lemon juice; mix well. Stir in the ginger ale. Add the undrained grapefruit. Pour into a serving bowl.
- Chill, covered, until set. Arrange the maraschino cherries decoratively over the top before serving.
