Grapefruit Salad with Ginger Ale

A hot summer's day salad that is great served with grilled chicken breasts, or topped with shrimp.

  • Prep Time: 15 minutes
  • Yield: 8 Servings
  • 2 tbsp unflavored gelatin
  • ¼ cup cold water
  • ½ cup boiling water
  • ¼ cup sugar
  • ¼ cup lemon juice
  • 1 cup ginger ale
  • 1 (20-ounce) can grapefruit sections
  • 8 maraschino cherries
  • Soften the gelatin in cold water in a bowl. Add the boiling water, stirring until the gelatin dissolves.
  • Add the sugar and lemon juice; mix well. Stir in the ginger ale. Add the undrained grapefruit. Pour into a serving bowl.
  • Chill, covered, until set. Arrange the maraschino cherries decoratively over the top before serving.
