You can have anything you want to eat at Pho Dien, so long as you want to eat pho. Except for things to drink, the menu offers nothing else. Fans of pho in Houston like it just this way; they consider Pho Dien among the best of countless pho parlors in a city blessed with so much good Vietnamese food.
What to eat at Pho Dien
Choose small, large, or extra large. As for what to get in it, the ever-popular rare steak and tendon rate high, as do meatballs and fatty brisket. Of course the broth is what matters. Pho Dien’s fairly clear, slightly salty broth appears bland and is not powerfully aromatic. But dip a spoon in and savor it without any noodles or meat and you realize that it delivers profound flavor in a way I’d call elegant rather than sledgehammer strong. Doctor it up if you wish with bean sprouts, slices of jalapeno pepper, greens, or a squeeze of fresh lime.
To drink with pho in Houston, you want sweet, strong Vietnamese coffee. Or for a unique twist, sip salty soda fresh-squeezed lemonade or soda with egg yolk and condensed milk. Smoothie choices include various fruits, avocado, and taro.
