Made with vinegared and sweetened rice, sushi most often is rolled around seafood and vegetables, wrapped in nori (sheets of seaweed), then cut into bite-size pieces. It commonly is accompanied by a sheaf of pickled ginger and a small portion of hot green Japanese horseradish known as wasabi. Raw fish is a standard ingredient; common versions are a California roll made with surimi (imitation crab) and avocado and a Seattle roll of salmon, cream cheese, and avocado.
