Shin Ramen

Review by: Miranda Cilfone & Kris Masilamani

Japanese cuisine and culture permeate Los Angeles, making a noodle fix essential. Shin Ramen, located in the heart of Hollywood, offers casual  atmosphere and a local feel. Its specialties are sushi, rice bowls, and, of course, ramen.

The ramen is terrific. Its chicken broth is pure and tasty, its thin noodles cooked to perfection, the pork sliced like bacon and just as savory. For the unique “dip ramen,” thick noodles are served on the side, to be dipped into the broth. The process of dipping the noodles maintains their firmness and bounce, ensuring each bite is springy and fresh. As its name suggests, Fire Dip Ramen leaves flames at the tip of your tongue.

Shin Ramen’s California roll is large and filling, even if the rice could be stiffer and more flavorful. Crab salad is well complemented by crisp cucumber and avocado. Spicy tuna Don has the same bland rice, but the blend of raw fish and spices tastes more refined than most spicy tuna salads.

Worth a detour!
