Flounder

Flounder is a name for several kinds of flatfish that develop both eyes on one side of their body. It may be served as a fillet, sometimes stuffed with crab; and it also is one of the best fishes to eat whole because its meat so easily separates from its bones. Crispy flounder is a dish that takes good advantage of that fact. It is a whole fish, beheaded and dressed, then deeply scored with a knife so that as it broils the flesh rises up in bite size nuggets that easily are hoisted from the skeleton with the gentle tug of a fork. At Hyman Seafood in Charleston, crispy flounder comes with a ramekin of hot-pepper jelly.
