Except for vegan variants, custard pie is egg custard pie, its featured ingredients being the luxurious harmony of eggs and cream, plus sugar (and maybe vanilla and/or nutmeg). It is soft, jiggly, and friendly. (And it also is the weapon of choice for anyone who is planning to throw a pie in somebody’s face.) Being the plainest of pies, it is natural to enhance the custard with some kind of filling, from fruits to almonds to beans. A vintage New England version is known as Marlborough pie, which adds slivers of apple and lemon.
