It’s less common in restaurants, although in North Bend, Washington, Twede’s Cafe (made famous in TV’s “Twin Peaks” for its cherry pie) makes a colossal lemon bar that is powerfully sweet as well as powerfully lemony; and in Mariposa, California, the Sugar Pine Cafe makes a lemon square that Roadfood reviews Maggie Rosenberg and Trevor Hagstrom described as having “the flavor of a lemon square, the richness of a blondie, and the light texture of chiffon cake.”
