A rectangular cookie with the texture of cake, the lemon bar is an easy-to-make favorite in home kitchens for charity bake sales. It’s less common in restaurants, although in North Bend, Washington, Twede’s Cafe (made famous in TV’s “Twin Peaks” for its cherry pie) makes a colossal lemon bar that is powerfully sweet as well as powerfully lemony; and in Mariposa, California, the Sugar Pine Cafe makes a lemon square that Roadfood reviews Maggie Rosenberg and Trevor Hagstrom described as having “the flavor of a lemon square, the richness of a blondie, and the light texture of chiffon cake.”
