Sausage

A sausage is any kind of encased ground meat (and if it is a patty or a loaf, not cased), usually well spiced and frequently smoked. It has several distinct American personalities: hot links from the BBQ pits of the Southwest, German-flavored links such as mettwurst that are popular in Cincinnati, the breakfast meat called goetta (also in Cincinnati), boudin sausage and andouille sausage in Cajun country, scrapple and Lebanon bologna in the Mid-Atlantic region.
