Menudo

Menudo is a Mexican soup made from hominy, tripe, and hot red chile peppers. It is served with garnishes of onion, lime, and cilantro and sided by tortillas or bolillo rolls. A party dish and an after-party dish, it is mostly a weekend meal, partly because it takes a long time to cook and partly because it is alleged to cure hangovers. Most restaurants that make it offer menudo not only by the bowl but by the quart and gallon for taking home.
