Layer Cake

Layer cakes come in countless flavors and can be a modest, two-layer affair or a foot-tall extravaganza with 5 layers or more. In the U.S., the layer-champ of cakes is Smith Island Cake of the Chesapeake Bay. It can have a dozen very thin layers or more, ribboned with frosting. Other regional favorites are the South’s supersweet hummingbird cake and pig pickin’ cake, Lane Cake in Alabama (that’s sponge cake layered with bourbon-soaked raisins, pecans, and coconut), and maple-walnut cake in New England.
