Plastered with spice and cooked in a smoky oven, jerk chicken has long been a main attraction of Jamaican kitchens. The perfumy, peppery punch of jerk seasonings has encouraged its use beyond tradition, as a pizza topping and salad add-on offered by not-necessarily Jamaican restaurants. A couple of unusual uses for jerk chicken are in the soul rolls (like egg rolls) of Jackie M’s & Son Cafe in Augusta, Georgia, and in sliders with smoked pineapple at Mason Social in Alexandria, Virginia.
