Hummingbird Cake

The recipe for hummingbird cake first was published by Southern Living magazine in 1978. A cream-cheese-frosted layer cake containing mashed bananas, crushed pineapple, and chopped pecans, it is cherished by sweet tooths of the South. Although one might assume that the cake was named because it is sweet enough for a hummingbird to love, culinary genealogists trace it back to the Doctor Bird, a swallow-tailed hummingbird that lives only in Jamaica, and a Jamaican banana cake that was its inspiration.
