Horchata

At Mexican restaurants all over the country, especially in the Southwest, expect horchata on the beverage menu. A rice-milk beverage that varies from saki-thin to milk-shake rich, it always is at least slightly sweet. Its starchy character makes it an especially effective balm when eating very spicy food. It is served on ice, often with a dusting of cinnamon.
