Frites

Frites equals fries in French. French fries, that is. This is a good thing to know if you travel to the International Boundary in Maine or beyond it into Quebec. In this region, menus list pommes frites, and as a rule, at Quebec’s casse-croutes (roadside eat-shacks), they are the superb kind of potato that is twice fried, developing a slightly chewy skin and creamy insides.
