Carne Asada

A common choice on Mexican menus as a filling for tacos and burritos, as a topping on nachos, in tortas and gorditas, carne asada is, simply, grilled beef. It often begins as a tough cut, such as skirt steak, and therefore gets marinated before it’s cooked and most often is chopped for whatever dish it stars in.
