Caramel Cake

As a sheet cake, layer cake, bundt cake, or cupcake, caramel cake is yellow cake with caramel frosting. Simple enough. A fairly good one might be found almost anywhere, but bakers of the South have made it their mission to create the most satiny cake – like pound cake, but fluffy – and caramel that is a celestial balance of butter, sugar, and cream. An exception to southern supremacy is Natalie’s Cakes & More of Florissant, Missouri, where golden-caramel-frosted sheet cake slices are square with their edges trimmed plumb … and where bags of trimmed cake edges are given away to customers.
