If you love french fries, Boise Fry Company was created with you in mind. But before placing your order at one of the six locations in and around the city, important decisions must be made. You not only choose from a half dozen types of potato; there are also several different ways to cut them cuts, including shoestring, regular, homestyle (extra-thick), curly, and po’ balls.
We like the Laura potato from Germany, cut in a curly style. This tangle of thin fries has a dark golden hue, and is exceedingly crisp with plenty of skin and a buttery, nutty flavor. A table in the dining area allows customers to help themselves to dipping sauces. These range from ketchup and Utah fry sauce to blueberry ketchup and sour Thai. My favorite is sweet mustard, but not because it’s gluten-free and vegan. It is such a welcome balance of sweetness and spicy kick.
Burger options include beef, bison, turkey, and vegan. Our Classic Burger (beef) came with lettuce, tomato, red onion, and mildly sour house made pickles, plus we added cheese for an extra 50 cents. In the true spirit of Idaho, burgers are bedded in soft, whole wheat potato buns. We like the burger just fine, but on our next visit, we are going to concentrate more on fries.
