Sweet Potato Pancakes

As is true of donuts that include mashed potatoes in the dough, pancakes made with sweet potatoes tend to be smooth and extra-tender. They are earthy as much as they are sweet, which makes them ideal candidates for plenty of whipped butter and syrup or, best of all, the cinnamon cream that is offered with them at Nashville’s Pancake Pantry and at the Sunrise Grill in Martinez, Georgia. As for a breakfast meat to accompany sweet potato pancakes, country ham is an inspired choice.
