Sausage & Eggs

In every diner and coffee shop, it is an expected option to accompany eggs with sausage, either as links or patties. In Mexican restaurants of the Southwest and West, it is more common to mix sausage into the eggs as they are scrambled, sometimes also including bits of tortilla to make what’s known as migas. The sausage is chorizo, which is very spicy.
