Crawfish Pie

Mostly a Cajun dish, but also served in New Orleans Creole restaurants, crawfish pie is a double-cruster that contains not only crawdad tails but also southern Louisiana’s “holy trinity” of chopped onions, green bell peppers, and celery. Restaurants may offer individual-size crawfish pies plated with rice and gravy; but it is common for home cooks to make full-size versions for the family.
