Coconut Fried Chicken

More commonly enveloping shrimp, batter containing shreds of coconut does wonders on fried chicken, too – that is, if you like your chicken sweet. A more subtle way to include the tropical flavor in fried chicken is to dip the pieces of bird in coconut milk rather than the more traditional buttermilk. Season the coconut milk with jerk seasonings and the sweet/hot harmony is dazzling.
