Fried chicken vies with burgers as the country’s favorite fast food; and in the South, frying it is a fine culinary art. New York State’s Cornell chicken is all about community gatherings. Chicago’s chicken Vesuvio takes it to the height of elegance. Barberton chicken is so beloved that Barberton, Ohio, has declared itself the Chicken Capital of the World. But then, Gordonsville, Virginia, also has called itself the Chicken Leg Center of the Universe. In the Illinois River Valley, chicken always comes with “ravs,” which is short for ravioli (but in fact, are tortellini). And let us not neglect chicken & waffles on soul food menus, chicken pies in diners of the Northeast, chicken katsu in Hawaii, chicken chili, chicken & dumplin’s, and jerk chicken from Jamaica.
