Coconut Cake

Always made in layers with yellow cake that may or may not contain shreds of coconut, coconut cake is mostly about its frosting. Abounding with coconut shreds, it typically is very sweet and can range from thick stuff made with coconut cream cheese to fluffy frosting leavened with egg whites, as ethereal as whipped cream. Some bakers include sour cream in the cake, a clever way to balance its relentless sweetness.
