Donkeys are known for their ability to pack a lot of stuff. “Burrito” means little donkey, and in most cases they do indeed pack a full load. Folded and self-enclosed, a burrito at least contains cheese and meat or, if vegetarian, cheese and beans; but it’s more common to find them stuffed with myriad ingredients. Among distinct styles is the California burrito, which contains French fries along with meat, salsa, sour cream and guacamole. Burritos first were eaten in the U.S. in the 1960s, and in today’s world they are like pizza – infinitely adaptable to taste and dietary desires. Poke burrito, anyone? How about a burrito stuffed with Cajun jambalaya? A burrito containing all the ingredients you’d find in an Italian sub? Each is on the menu of one of America’s burrito joints. A chimichanga is a burrito that has been deep-fried.
