American chop suey bears no resemblance to Chinese-American chop suey. It got its name because like the pseudo-Chinese dish, it is a higgledy-piggledy mix of ingredients — at least elbow macaroni, ground beef, and tomato sauce with the possible addition of cheese and breadcrumbs. Never fashionable, but once fairly common on Yankee school-lunch menus and on the dinner table in frugal homes, American chop suey is now a rarity occasionally found in old-time diners.
