“Boy de good, yeh,” is the motto of Andre’s Cajun Cracklins. The Cajun accent is no affectation. At this roadside stand next to a convenience store, you will find exemplary boudin blanc, crawfish (live or boiled), local-caught crabs, and super-succulent cracklins. Not to mention lard in five-gallon buckets, should you need it.
Roadside Boudin
The boudin is a local classic. Buy it by the foot-long link; and you better have a sharp knife, for its natural casing doesn’t tear easily. Inside is a savory soft mélange of pork and rice with a gentle spice kick. A link such as this could be fork food, eaten off a plate. But it’s just as easy to rip it open with knife (or teeth) and devour its filling with only minor grease-drippage on hands and lap.
Melt-In-The Mouth
Traditional pork cracklins do crackle, but then dissolve into a slurry of pork flavor on the tongue. Chicken cracklins seem even richer. Andre’s big fried turkey wings pack crunchy crust and dripping-moist meat. Whatever you decide to eat, take extra napkins!
No place to sit at Andre’s Cajun Cracklins. It is strictly a take-out stand.
