I recently went to our local butcher and he told me about a new cut of meat (for them anyway) called Flat Iron. Here is some info:
I purchased 3 of them marinated in Black Nugget marinade – it’s a combination of spices and molasses – makes the steaks almost black. We usually get london broil like this, and they are excellent.
My question is has anyone had any experience in cooking flat iron steaks? What is the best way? They are rather thin, so I am thinking high heat on the grill or in a cast iron pan. Any suggestions?
