Man, that’s a tough one. It’s a toss up tween Gumbo and Etouffe for me.
I also once had this amazing spicy cornbread at a cajun shack once…very oily but delicious. I’d vote for that, too, if I could.
I love any and all Cajun food.
But crawfish are mighty hard to beat.
I know and love that smell !!!!
I am preparing for my annual trip south to a Gumbo competition, I love the challenges of getting the roux jus right, and the thickness just right.
I love GUMBO.
My vote is for Gumbo. Not only because I love it but it is really fun to make. I love trying to judge the right color for the roux. And then the whole house smells like New Orleans for hours as it simmers away.
I’d vote "All of the Above", too! But, after much consideration and hemming and hawing, I’m going with the boudin, by a narrow margin.
I got to try everything but the Oyster Po Boy when I was in New Orleans, and I loved it all. I voted for Red Beans & Rice because my wife doesn’t like it, and I have to wait until she’s away from home to cook it, so I get cravings.

I know it would be too easy
But How can I decide which, it is like picking which child you love most!! [:D]
Our first "real" jambalaya was a truly fiery version we eat at Coop’s in the French Quarter. After a couple of Dixie longnecks failed to put out the fire, we asked for milk to wash it down. The locals got a big charge out of that!
Jambalaya. My son-in-law made a great jambalaya that I posted here not too long ago. Last week Bobby Flay lost a throw down on jambalaya.

Yeah, I couldn’t pick one item to save my life…but I eventually had to go with Crawfish Etouffee.
And add a category "From up North, I have no clue"…
Though Felix4067 did try to explain Gumbo to me about 7 years ago.. I felt she was talking in a foreign tongue at the time… (she’s well traveled and knows her southern food).. Blackened Chicken around here is a beat up breast, rolled in GFS Cajun seasoning and grilled… Served Deluxe. As Cajun as it has been for me…

I was getting ready to vote for Beignets this morning as I was drinking my cafe du monde coffee, but I got sidetracked. When
I logged back on the afternoon I was in the mood for a sandwich, so my vote ended up going for Oyster Po Boy.
I know it was hard to pick from so many good choices
