Yipee! My neighbor told me last night that he was giving me a backstrap and tenderloins! His brother shot 2 deer and used my neighbors tag for one. Sssssh. Don’t tell.
That food looked real good.
Great looking burger Vic….in my parts we would call that a Salisbury steak
I don’t know why that’s just what they call em….. I’m knee deep in venison
I got 3 and was given 2….minus the back strap….if ya ever get out my way I’ll send ya back with plenty….

Thanks Everyone! As for the fat filler in the venison, not sure, but will find out later today. Like I said, a buddy gave them to me, and I didn’t pound him with a ton of questions, just a bunch of Thank You’s! My guess would be beef fat from the flavor. As for the brown meat, it was not fat, thats from the meat that came in contact with the wrapper.. I want to say freezer burn, but there sure was no freezer burn taste to it. Also, gamey taste was barely there, just enough to give it a little flavor.. I put everyone to work here that wanted to have at this feast. Had my buddy chop up the lettuce, then mix it with mayo so we could speed assemble these puppies.. The burgers could have been placed on a bun alone and have enough flavor to put a smile on your face, without adding any toppings like I did.
An Mr. Hoffman, those buns are grocery store version.. Aunt Millies Hearth Style. Must sell good around here, considering they’re always fresh.. That and a bit bigger then the normal grocery store buns (yet not as big or thick as a Kaiser bun).
As for the brats. They’re just a mediocre one the local grocery store makes. Only reason I bought them was the price… 69 cents a lb. (family pack). So for about 3 bucks, you get around 4lbs. So when they go on sale, I clean up. Taste nothing like the ones from Franks Meats, but again, the price calls my name.. (normally get the green pepper and onion version, but these where new to me so had to try them out). When grilling them, I brown them up nicely then move them over to the cooler side (or edge of the grill) to finish cooking. Always come out nice and juicy.. Needless to say, no leftovers.

Thank you, that explained a lot. The burgers were given by a certain hunter in my family, the sausage was purchased. Knowing this certain hunter the work that is involved means he prolly didn’t do it rofl.
I see that your were given burgers, if they are not very bloody, add some fat or fat hamburger meat. This will help to tone down the gamey taste.
For roast, allow to drain in the frig after thawing. Then marinate and slow cook with moisture and some fat.
For steaks give a quick rinse under cold water, dry and then soak in butter milk. I pan fry with a little lard & butter.
It he meat is still too gamey after these measures, then it will make excelent dogfood. You do have a pair of Scotties don’t you? [:D]

If you have venison, or any game meat that has what’s been falsely described as a gamey taste, there is nothing you can do about it, other than to try to kill the taste with some disgusting marinade. That’s because it was not properly cared for in the field. Game that has been field-dressed properly and cooled down quickly, and then protected from the elements and from bugs until it is processed, has no "gamey" taste.

I take any give-away venison too! [:D] My neighbor gave me 2 tenderloins last year but didn’t have any luck hunting this year. [:(]
Looks great UncleVic, except for the lettuce, tomatoes, onion and pickles. [:D] And those buns look great.
Question: Do you know whether the processor used pork fat or beef fat?
One more question: Have you checked into the sanity of someone who gives away venison backstraps? [:D]

I could eat one of those burgers right now.
One way we like ground venison is to add seasonings including a splash of Worcestershire sauce and red wine and form it into two large patties about 1/2 to 3/4 inch thick and the size of a piepan. Put one in the greased pan, then spread with mustard and sauteed onions (and mushrooms and red peppers if you want), then cover with the second patty and pinch the edges together. Cover top with a few strips of bacon and bake at 350 until done to your liking. Cut in wedges to serve.

My vinison burgers I mix with about 3 parts to 1 part fat (beef or pork) or cheap fat hamburger meat, other wise the burger will be vary dry. Most people don t realize they are eating venison until I tell them.
Unclevic, & . In the 2nd photo there is dark red meat and lighter red meat, it looks like almost 50/50 mix. Is that right and was it pork or beef?

Looks wonderful, I’m starving. Incidentally our executive assistant handed me a hunk of venison salami which he made at his ranch on Bandera. I’ve never had venison salami, can’t wait to try it. No much in the way of good venison down here this year. The all look skinny. Too much developement and not enough habitat for the deer. Lots of folks don’t even bother to go to their deer leases this year.
