Thanks for the compliments, I did it on the cheap and did all the work myself, but I keep on improving on the build as I get more “extra” money.
Also I have it setup exactly the way I want it and with room for expansion and menu changes.
Since we are the only Authentic Mexican in town we have been getting a lot of requests for catering and special events, will remember to pack my camera next time we go out so I can get some pics of the truck at full steam!
3 months after and I’m done building, haven’t had time to post pictures, had inspection and need to correct a couple of things by Friday, nothing major, will post pics soon.
Also we are having an inauguration party for the truck, will post photos of the event too.

on vacation last week wit da ohana, and stumbled upon u guyz at da farmers market in Pearl City. Had 3 of those tacos for $10 and dey wuz onolicious!! (plate at da bottom)
so finally got some free time and removed the roll up and built the frame, I still need to get it attached to the frame, but that should be easy, we also built the frame for the door and got some stainless on the wall.
SCTC – Good job on your build, the van looks great. It is always fun to see someone’s dream come to fruition. I hope you have great success in your operation.

Hi reese, I do have the list and locations, I’ll be using an electric water heater, since our sanitation dept isn’t too strict I’m pretty sure I can pass if not then I’ll have to run the water lines under and across the truck.

OK, lucky you on having a laid back health department.
I have not started to cook, my county is really strict and I am still trying to find a suitable commissary w/o paying an arm and a leg each month. However the whether is getting warmer so I am picking up the pace and should have a place soon. I have a festival coming up this month but I was not able to rent a space big enough for the truck so I have to work out of a 10×10 booth, I really wanted to showcase the truck there but I guess it is a good thing as I am still wrapping the truck due to all the rain lately.

You could always paint the hood.
I was thinking about that, I think rustoleum will do the trick, it will also add a smoother surface that will be easier to clean no?
Maybe too late now, but I’d recommend using closed end pop rivets, and to back this up an adhesive rubber sealing button, especially for any roof rivets. The buttons go over the hole on the outside you then just push the rivet thru to button and it gets compressed down, that with the closed end rivets gives you a waterproof seal.
I was thinking of dipping the rivets on marine sealant just like we do with kayaks here but got too excited and forgot LOL, I’ll do it for the rest of the walls, Also I still need to paint the exterior so I’m hoping that the paint will form some kind of seal, we’ll see
So I’m done, we passed inspection, and now we are ready to sell sell sell!
Just a piece of advice to anybody trying to do their own work, READ thru all the build posts here and never assume that whatever someone did will fit your project, there are many things that now that I think about it I could’ve done different/better, but the excitement and need to have the truck running and making money, took the best of me.
I sifted thru all of the build posts and picked and chose from every single one of them based on my needs and local health department codes.
Again build to your needs, I think we can agree that reese’s, daddywoofdog and kingofcreams builds are the tits but you’ll never see 2 of the same builds.
anyways I thank you ALL for pouring all of your knowledge so we can all benefit from it.
