    It is illegal to cook, hot hold, and serve fresh bacon from a hot dog cart in the United States.

    Unless the rules are different for carts & food trucks, I don’t believe this is correct CSD.

    There’s a food truck in PHX that does Sonoran Dogs That’s won a number of Awards with their bacon wrapped Sonoran Dogs and is considered the best Sonoran Dog in the Valley.

    Getting ready to start a hot dog cart and getting my menu together. Do you think it's feasible to do a Tijuana dog. Would this be to timely considering the customer is waiting and you have to cook the bacon

    I own a cart in Portland maine.

     

    We have been cooking our carne asada, chorizo and fish for our tacos from raw to hot hold on our cart for 4 years now.

     

    There is no Federal law that has prevented us from doing this and local authorities say we are fine so long as we follow all the proper temp and holding guidelines. Which we do. We have a 3 bay sink, a hand washing sink and a commissary (which is now our brick and mortar restaurant.)  These will most likely be required by your health department if they do allow you to use bacon.

    check with your local health department to see what they will approve you to do.

     

    there is also precooked bacon, it’s not very good but if you are determined you could make it work.

    Laws are state, county, and local. You are the only vendor I know that is licensed to cook, hot hold, and serve raw food from a cart. Consider yourself one of the chosen few.

    The rules for trucks and carts are different. Trucks are allowed to cook raw products, like bacon. They’re required to have a three compartment sink for washing, rinsing, and sanitizing and a hand wash sink. They use mechanical refrigeration for cold holding, instead of coolers with ice, the reason for gas powered generators or a marine battery with an inverter. Some carts are equipped with char grill or flat griddle, however, they’re not allowed to hot hold pre cooked products exposed to the air, unless covered after brought to hot hold temps. Trucks with a gas grill and or griddle are required to use a ventilated hood with a fire suppression system over gas griddles, grills, and deep fryers, just like a brick and mortar restaurant. Some health department don’t require hoods and suppression system for food trucks, but with the recent rash of food truck fires, it should be required for any truck with an open flame or hot oil.

    CSD is correct, no raw meats on a cart.

    Trucks and open carts are 2 different animals. Open carts are allowed to carry precooked items if bacon is pre cooked it is ok. Food trucks carry more equipment and there for can scratch make food. This comes from PA health code and is almost the same across the board.
